Ingredients
- 500g Potatoes
- 2l Vegetable oil
- Salt
- 500g Beef mince
- 4 Shallots
- 1 tsp English mustard
- 1 Egg yolk
- 25g Breadcrumbs
- 4 rashers Smoked streaky bacon
- 4 Sesame-seed buns
- 2 tbsp Tomato ketchup
- 8 slices Red Leicester cheese
- 1 large handful Lamb's lettuce
- 2 Gherkins
- 2 Vine tomatoes
Method
- Heat the vegetable oil in a large saucepan to 150C.
- Add the potatoes and cook for 5-8 minutes, or until they are golden brown. Drain and dry on kitchen paper.
- Increase the oil temperature to 180C and re-fry the chips for an additional 2-3 minutes, or until golden.
- Meanwhile, mix together the beef mince, shallots, English mustard, egg yolk, and breadcrumbs in a large bowl.
- Divide the mixture into 4 equal portions and shape each one into a burger. Cover and refrigerate for at least 30 minutes.
- Heat a griddle pan over medium heat and brush with oil. Cook the burgers for about 10-12 minutes per side, or until cooked through.
- While the burgers are cooking, toast the buns on the griddle pan by placing them cut-side down for a minute.
- Assemble the burgers by spreading ketchup on the bottom bun, followed by a burger patty, some bacon, cheese, lettuce, tomato, and finally the top bun.
- Serve the burgers with the triple-cooked chips and coleslaw, if desired.
