Ingredients
- 15g olive oil
- 120g smoked streaky bacon
- 250g onions
- 200g carrots
- 150g celery
- 6 cloves garlic
- 2 sprigs rosemary
- 500g beef mince
- 400g (tins) plum tomatoes
- 20g basil
- 5g dried oregano
- 2 bay leaves
- 50g tomato purée
- 250ml beef stock
- 125ml red wine
- 150g cherry tomatoes
- 120g parmesan cheese
Method
- Heat the olive oil in a large saucepan over medium heat.
- Add the smoked streaky bacon and cook until golden brown, stirring occasionally. Remove from the pan and set aside.
- Chop the onions, carrots, celery, and garlic into small pieces and add them to the pan with the remaining oil. Cook until they are softened and lightly browned, stirring occasionally.
- Add the chopped rosemary and cook for 1 minute, stirring constantly.
- Add the beef mince and cook until it is no longer pink, breaking it up with a spoon as it cooks.
- Stir in the plum tomatoes, dried oregano, bay leaves, tomato purée, beef stock, red wine, and cherry tomatoes. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour and 15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Grate the parmesan cheese and stir it into the sauce. Serve hot over cooked spaghetti, garnished with chopped fresh basil.
