Ingredients
- 300g minced beef
- 200g fresh breadcrumbs
- 120g sachet black bean sauce
- 4 tbsp sweet chilli sauce
- 3 tbsp ketchup
- 2 tsp Chinese five-spice powder
- 1 tbsp sunflower oil
- 400g mixed stir-fry vegetables
- 300g pack medium egg noodles
- 3 tbsp soy sauce
- 1 tbsp sesame seeds
- ½ bunch fresh mint leaves
Method
- Preheat the oven to 220C/200C fan/gas 7. In a large mixing bowl, combine the minced beef, breadcrumbs, black bean sauce, sweet chilli sauce, ketchup, and five-spice powder. Mix well with your hands until just combined.
- Using your hands, shape the mixture into walnut-sized meatballs. You may need to wet your hands slightly to help shape them evenly.
- Place the meatballs on a baking tray lined with parchment paper, leaving some space between each one. Drizzle with sunflower oil and gently roll them to coat evenly.
- Roast the meatballs in the preheated oven for 25 minutes, turning once, until golden brown.
- While the meatballs are cooking, cook the noodles according to the package instructions. Drain and set aside.
- Heat a large wok or frying pan with a tablespoon of oil over medium-high heat. Add the mixed stir-fry vegetables and cook for 2-3 minutes, stirring frequently.
- Add the cooked noodles, black bean sauce, sweet chilli sauce, ketchup, five-spice powder, and soy sauce to the wok. Stir-fry everything together for about 2 minutes, until the noodles are well coated with the sauce.
- Remove the meatballs from the oven and add them to the stir-fried noodle mixture. Toss everything together to combine.
- Season with sesame seeds and fresh mint leaves before serving.
