Ingredients
- 250g beef fillet steak, sliced into thin strips
- 150g mushrooms, sliced
- 100g plain flour
- 2 tbsp butter
- 1 onion, sliced
- 2 cloves garlic, minced
- 50g crème fraîche
- 25g English mustard powder
- 250ml beef stock
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Method
- Heat a large non-stick frying pan over medium-high heat. Add the sliced onion and cook until softened, stirring occasionally, about 10 minutes.
- Stir in the minced garlic and cook for 1 minute.
- Add the butter to the pan and let it melt. Then add the sliced mushrooms and cook until they release their moisture and start browning, about 5 minutes.
- Sprinkle the plain flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes, stirring constantly.
- Add the sliced beef strips to the pan, stirring to coat with the flour mixture. Cook until the beef is browned on all sides, about 3-4 minutes.
- Pour in the crème fraîche, mustard powder, and beef stock. Stir to combine, then bring the sauce to a simmer.
- Reduce the heat to low and let the sauce cook for 5-7 minutes, stirring occasionally, until it thickens.
- Season the stroganoff with salt and pepper to taste. Serve hot, garnished with chopped fresh parsley if desired.
