Ingredients
- 250g plain flour
- 220g chilled butter, chopped
- 2 eggs, beaten
- 100g cooking chorizo sausage, chopped
- 300g beef mince, chopped
- 1 small onion, chopped
- ½ small pack coriander, finely chopped
- ½ small pack parsley, finely chopped
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp chilli flakes
- 2 tbsp tomato purée
Method
- Heat the oven to 180°C (160°C fan)/Gas 4.
- Combine flour and salt in a bowl. Add butter and, using fingertips, rub into crumbly mixture.
- Add eggs and 100ml cold water. Mix until dough forms. Knead on floured surface for 5 minutes, then cover with cling film and rest in fridge for 20 minutes.
- Cook chorizo in a frying pan over medium heat, stirring occasionally, for 2 minutes.
- Add beef mince, onion, coriander, parsley, paprika, cumin and chilli flakes to the pan. Cook, stirring occasionally, for 7-10 minutes until cooked through.
- Remove from heat and let cool.
- Divide dough into four portions. Roll out each portion thinly using a rolling pin.
- Cut out circles of dough using a biscuit cutter. Place 1 tsp of filling in the centre of each circle. Wet edges, pinch both sides up and fold in half to seal.
- Brush tops with beaten egg and bake on lined baking tray for 20 minutes, or until golden brown.
- Serve hot from the oven or reheat in the oven for a few minutes if cold.
