Ingredients
- 100g onion
- 50g celery
- 60g bacon
- 3g garlic
- 400g can chopped tomatoes
- 20g tomato purée
- 10g treacle or brown sugar
- 15g malt vinegar
- 400g haricot beans
- 300g potato
- 60ml milk
- 20g cream cheese
Method
- Heat a large pan over medium heat. Add oil, then sauté the onion and celery until softened.
- Add the bacon to the pan, cooking until crispy. Remove the bacon from the pan with a slotted spoon and set aside.
- Add the garlic to the pan and cook for 30 seconds, stirring constantly to prevent burning.
- Pour in the chopped tomatoes, tomato purée, treacle or brown sugar, and malt vinegar. Stir well to combine.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for 10-15 minutes, stirring occasionally.
- Stir in the haricot beans and cooked bacon. Season with salt to taste.
- Boil the potato in a large pan of salted water until tender, about 12-15 minutes.
- Drain the potatoes and mash with milk, cream cheese, and a pinch of salt.
- Transfer the bean mixture to two small microwave-safe bowls. Top each bowl with a generous dollop of mashed potato.
- Cover each bowl with a plate to prevent the top from drying out, then microwave on high for 3 minutes, or until hot and steaming.
