Ingredients
- 300g Mixed dried fruit
- 200g Light muscovado sugar
- 1 orange, zested Orange zest
- 250ml Hot black tea
- 350g Self-raising flour
- 2 tsp Mixed spice
- 1 egg, beaten Egg
- 50g Softened butter
Method
- Preheat your oven to 160°C/140°C fan/gas 3.
- Tip the mixed dried fruit into a heatproof bowl along with the light muscovado sugar and orange zest. Pour over the hot black tea, stir everything together and leave to soak overnight.
- Heat the oven to the same temperature. Butter the base and short sides of a 900g loaf tin and line with a long strip of baking parchment.
- In a separate bowl, tip the self-raising flour and mixed spice into a clean surface. Add the soaked fruit mixture, beaten egg and softened butter, and mix until well combined.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 1 hour and 25 minutes, covering with foil or parchment if the top starts to get too dark. Check with a skewer if it doesnt come out clean, bake for another 5-10 mins.
- Leave to cool in the tin for 10 minutes before removing and leaving to cool completely.
- Serve sliced and buttered, if desired.
