Ingredients
- 90g bacon lardons
- 50ml olive oil
- 1 medium courgette, coarsely grated
- 2 cloves garlic, crushed
- 150g tagliatelle
- 30g capers, drained
- 20g lemon zest and juice
- 80g pecorino, grated
Method
- Heat the olive oil in a large saucepan over medium heat. Add the bacon lardons and cook until crispy, stirring occasionally.
- Remove the cooked bacon from the pan with a slotted spoon and set aside on a paper towel-lined plate. Leave the grease in the pan.
- Add the courgette to the pan and cook for 6-8 minutes, stirring frequently, until it starts to soften.
- Mince the garlic and add it to the pan; stir for 1 minute.
- Add the tagliatelle to the pan, along with 400ml water. Stir to combine, then bring the mixture to a simmer.
- Reduce the heat to low and cook, covered, for 7-9 minutes, or until the pasta is al dente.
- Stir in the capers, lemon zest and juice, pecorino, and cooked bacon. Add more water if necessary to achieve a creamy consistency.
- Simmer for an additional minute before serving.
