Ingredients
- 250g beef strips
- 2 tbsp cornflour
- 2 tbsp vegetable oil
- 2 garlic cloves, crushed
- 1-inch piece of ginger, peeled and cut into matchsticks
- 1 red chilli, thinly sliced
- 1 red pepper, cut into chunks
- 4 spring onions, sliced (green and white parts separated)
- 4 tbsp rice wine vinegar or white wine vinegar
- 2 tbsp soy sauce
- 2 tbsp sweet chilli sauce
- 2 tbsp tomato ketchup
Method
- Heat the air fryer to 220°C.
- Mix cornflour and a little oil in a bowl until smooth.
- Coat each piece of beef with the cornflour mixture, shaking off excess.
- Place the coated beef on the cooking rack in the air fryer basket.
- Cook for 6 minutes, then turn and cook for another 4-6 minutes until crispy.
- Meanwhile, heat 2 tbsp vegetable oil in a wok over high heat.
- Stir-fry garlic, ginger, chilli, pepper, and spring onion whites for 2-3 minutes until the pepper softens.
- Add vinegar, soy sauce, sweet chilli sauce, and tomato ketchup to the wok, mixing well.
- Toss in the cooked beef and stir through the sauce for another minute.
- Serve immediately, garnished with spring onion greens and additional sauce if desired.
